In the same pan, over medium heat, add the mushrooms and cook for 4 to 5minutes. Next, add the spinach and cook for 1 to 2 minutes or until wilted. Addthe coconut aminos and stir to combine.
Add the cauliflower rice to a bowl and top with mushrooms, spinach and thesliced avocado and collagen. Enjoy!

Leftovers: Refrigerate in an airtight container for up to three days. No Coconut Aminos? Use tamari or soy sauce instead. No Avocado Oil? Use olive oil or coconut oil instead.
