BAC Mushroom & Cauliflower Rice Bowl

Ingredients
- 1/2 tsp Avocado Oil
- 1 cup Cauliflower Rice
- 4 White Button Mushrooms (sliced)
- 2 cups Baby Spinach
- 1 1/2 tsp Coconut Aminos
- 1/2 Avocado (sliced)
- 1/2 oz Collagen Powder
Instructions
- Heat a skillet over medium heat. Add the avocado oil and then the ricedcauliflower. Sauté for 5 to 7 minutes, then remove and set aside.
- In the same pan, over medium heat, add the mushrooms and cook for 4 to 5minutes. Next, add the spinach and cook for 1 to 2 minutes or until wilted. Addthe coconut aminos and stir to combine.
- Add the cauliflower rice to a bowl and top with mushrooms, spinach and thesliced avocado and collagen. Enjoy!
Notes
Leftovers: Refrigerate in an airtight container for up to three days.
No Coconut Aminos? Use tamari or soy sauce instead.
